This Strawberry Tequila Cocktail with Ginger Beer recipe is the perfect berry cocktail for your next summer happy hour. Served with a homemade lime sugar rim this fruity tequila and ginger beer cocktail is ideal to sip by the pool. It’s quick to make with ingredients you probably already have.

Why you’ll love this easy strawberry cocktail

This fresh, fruity Strawberry Tequila Smash is topped up with ginger beer to give it a sweet and spicy edge.

As the weather warms up, I like to make refreshing drinks like this that pair fruit, citrus, and of course tequila.

And I don’t think you can go wrong with making a drink from muddled strawberries. There is just something so fun with their color in a drink, and everyone loves them!

Paired with plenty of fresh lime and topped up with refreshing, slightly spicy ginger beer this simple strawberry tequila drink may have a few more ingredients than my cocktails usually do, but I promise it is just as simple to make!

I’ve also finished the glasses with a quick, delicious homemade lime salt to make things extra special.

The lime salt is fragrant and has a beautiful green color. The flavored salt is perfect for most tequila cocktails.

Serve this fruity drink at any summer party or girl’s night.

Here’s what you need to make a Strawberry Tequila Cocktail with Ginger Beer:

Feel free to experiment with different types of tequila in this recipe. I prefer the flavor of blanco tequilas in fruity cocktails, but other varieties will add depth.

If you want to amp up the strawberry flavor in this drink, use my Strawberry Simple Syrup instead of a regular one.

I’ll show you how to make the lime salt below or use regular margarita salt.

Make the lime salt to rim the glass

To make the lime salt, zest 2 limes and add it to ¼ cup of salt. Stir until incorporated.

Pour on the flavored salt on a shallow plate then rim the glasses and set aside until needed.

With the help of a muddler, mash the limes and strawberries until the juices are released and the strawberries are pureed.

Add the simple syrup and tequila.

Add ice then shake well.

Step 5

Add ice to the rimmed glasses. Then strain the cocktail over the fresh ice.

How to make it your own

  • Raspberry or blueberry – Not a fan of strawberries? Muddle fresh raspberries or blueberries instead. This will both still taste great with the tequila, lime and ginger beer.
  • Use another spirit – Think this cocktail looks and sounds delicious but tequila is not really your thing? You can use gin or vodka instead, but I think white rum would be the tastiest substitute.
  • Top up with champagne – I love the taste of ginger beer in this tequila smash because I think it adds a pleasant spiciness but if you’re celebrating champagne or another sparkling wine would taste great too.

Can I make these cocktails ahead?

If you’re making these Strawberry Tequila Cocktails ahead for guests, muddle the strawberries, mint, and lime with tequila and simple syrup and strain it into a jar and keep in the fridge. You can do this up to 24 hours ahead so you just have to add a bit to a rimmed glass with ice then top with ginger beer to serve.

Do I have to make the salted rim?

I like to because it looks fancy, adds an extra hit of lime flavor and means the drink has that whole sweet and salty thing going on but if you don’t fancy the extra effort it is not essential. You do you!

  • In the glass of a cocktail shaker add the strawberries, mint, and limes.
  • With the help of a muddler, mash until the lime releases all the juices and the strawberries are pureed.
  • Add the tequila and simple syrup, and vigorously shake.
  • Rim the glasses with the lime salt and fill with ice.
  • Pour the tequila smash into the glasses using the strainer that came attached to the cocktail shaker.
  • Top up with ginger beer.
  • Garnish with mint sprigs and strawberry or lime wedges.

Notes

To make the lime salt just zest 2 limes over ¼ cup of salt and stir until incorporated.
I like to use blanco tequila but you can use reposado if you prefer. 
For even more strawberry flavor you can use a strawberry simple syrup instead of plain.
