    Easy Beer Cheese Dip Recipe

    Why this recipe works

    This tasty Beer Cheese dip is great for parties and one of my favorite easy appetizers to make at home whether I'm having people over or just want a delicious snack. The beer gives it such a unique flavor.

    Adding beer to recipes is a creative way to another layer of flavor and jazz up a classic dish. While the beer in my Beer Brownies is much more subtle, the beer in this dip is WOW! If you're not a beer fan, you may want to skip this!

    This hot dip can be made by novice cooks and requires little more effort than stirring. In under 30 minutes, you can have a tasty dish to share with family and friends that they won't soon forget.

    Since there are so few ingredients you want to make sure that what you use is great quality. Truly Grass Fed is an Irish dairy brand that cares about animal welfare and makes it a commitment to create exceptional products.

    To celebrate St. Patrick's Day this year, I decided to make something that felt like an Irish classic, but modern at the same time. Of course, we'll do a corned beef for dinner, but this hearty appetizer is a great day to start our meal.

    We don't go all out for this holiday. I don't turn everything green. We prefer, instead, to look to Irish foods to celebrate. Ireland's lands and climate are the perfect environments to create the best dairy farming. Adding Truly Grass Fed to your holiday meals is a must!

    From St. Patrick's Day to Father's Day, game day or any day, this easy dip is sure to be a new favorite.

    What you need to make Beer

    I used Truly Grass-Fed Sharp Cheddar Cheese to create this yummy Beer Dip. It's Non-GMO Project verified, rBST-free and Animal Welfare Approved by AGW.

    Because they use grass-fed cows, their products have a higher concentration of beta carotene, vitamin A omega fatty acids, and conjugated linoleic acids.

    And the TASTE! It's creamy, smooth and super flavorful. It's the best choice for this recipe since it is strong enough to stand up to the hearty beer.

    I used a lager-style beer for my hot Beer Cheese Dip, but you can change this up based on your preferences. You can even use an Irish beer, like Guinness, but it will change the flavor a bit.

    Between the sharp cheddar and beer, this dip has an almost pumpernickel flavor that you will crave. Trust me. I couldn't put this down.

    You'll also need flour, butter, salt, pepper, garlic powder, and dried parsley.

    Step-by-Step Instructions

    1. Grate the cheese

    Begin by grating your cheese. I used a food processor to grate my Truly Grass Fed sharp cheddar and it worked like a dream. It was super fast, but you could also use a box grater if you don't have a food processor.

    2. Make an easy roux

    To a saucepan, add flour and butter.

    Use a whisk to stir the flour and butter as it melts. It will be pretty thick, but this is your roux and is the base of this easy cheese dip.

    3. Add the seasonings

    Add the spices to the roux.

    4. Cook

    Cook for another 2 minutes, whisking constantly.

    5. Add the beer

    Add the beer, while whisking. It will start to thicken. It should be similar to a thick gravy.

    You can add more beer (⅛ cup at a time) to loosen it. Allow time to thicken before adding more. You want this to be thicker rather than super runny.

    6. Add and melt the cheese

    Add the grated cheese then whisk the dip until completely melted.

    7. Serve immediately

    Serve in a small bowl, immediately. Top with fresh cracked black pepper and you're all set.

    How to Serve this dip

    This dip is absolutely delicious and is best served with pretzels, crusty bread, and vegetables, like carrots and cucumbers.

    You can also dip potato chips and tortilla chips in this yummy dip. And while I'm not a fan of this combination, green apple slices are also an option.

    What I love about this Beer Dip is that it also works as a sauce. You can use it with things like chicken tenders, pigs-in-a-blanket and even on sandwiches. And it would be AMAZING served over potatoes.

    Tips and Tricks

    • Don't be afraid of the word "roux" it is the technique of cooking the flour taste out and it's not super tricky. Just keep whisking.
    • The beer flavor gets stronger as it cooks so make sure you choose one that you love the flavor of.
    • Pre-shredded cheese doesn't typically melt as well. Block cheese, like this tasty Truly Grass Fed sharp cheddar, that you grate yourself, is a better choice.
    • This dip isn't for everyone. It's a very bold flavor so you will want to warn your guests.
    • Keep this dip warm while serving by serving it in a fondue pot or a mini dip warmer. If a skin forms on top, just use a spoon to mix it.

    What beer is good for this easy Beer Cheese?

    I like a lager beer for this hot Beer Cheese dip. You can find it in most stores easily. You can also use a darker beer, like a stout for a slightly different flavor.

    Do you eat Beer Cheese hot or cold?

    It is traditionally served cold. But I prefer a warm dip. It is still delicious as it cools though. It's really up to you.

    Is Beer Cheese Dip Alcoholic?

    There is alcohol in this dip due to the beer, but because it is cooked, some of the alcohol gets cooked out. You would probably make yourself sick from too much cheese before you would feel anything from the beer.

    How do you store this dip?

    Store this tasty dip with beer in an air-tight container in the fridge for up to 3 days.

    Equipment

    • Sauce pan
    • Whisk

    Ingredients

    • 2 tablespoon butter
    • 2 TBSP flour
    • 1 teaspoon garlic powder
    • 1 teaspoon dried parsley
    • ½ teaspoon salt
    • ½ teaspoon pepper (plus more for serving)
    • 1 cup lager beer
    • 8 oz cheddar cheese grated

    Instructions

    • Add the butter and flour to a saucepan on the stove.
    • Stir with a whisk as the butter melts, forming a roux.
    • Add garlic powder, parsley, salt and pepper and continue to whisk while the roux cooks for 2-3 minutes.
    • Whisk beer in to the roux as it thickens. It will be thick gravy consistency.
    • If it's too thick, add ⅛ cup more beer, then stir again, taking care to not make it too thin. (It will continue to thicken as it cools a little).
    • Add the grated cheese to the saucepan and whisk until melted and smooth.
    • Transfer to a serving dish, fondue pot or mini crock pot.
    • Add fresh cracked black pepper and serve with pretzels, bread, veggies and chips.
