I like to hand-shred a block of cheddar cheese myself rather than buying pre-shredded. While I always look for shortcuts, the flavor is just so much better when you do it yourself.

Here is used a sharp white cheddar because I think the flavor stands up to the salsa nicely. But you can use regular cheddar or even Mexican cheese if you prefer.

It’s best to use your favorite salsa or any variant that you already like the taste of. Hot salsa, mild salsa, or even green salsa would work for this recipe!
