It’s easy to drink, easy to make and easy to share with friends and family no matter what time of year.

There are some recipes that just feel like they should be served and drunk in the morning. And a Ginger Beer Mimosa is one of those. So if you’re looking for the perfect breakfast cocktail, this is it!

What you need to make a Moscow Mule Mimosa.

Look for a pulp-free orange juice to use unless you don’t mind the extra texture.

I love Reed’s Ginger Beer. It’s not overly sweet and has a nice ginger bite. I don’t think that ginger ale is a good substitution because it’s much sweeter.

You can use any champagne or sparkling wine you prefer. It doesn’t need to be expensive but you should like the flavor of it when sipped on its own.

Everyone has a certain way that they like their mimosas. I like mine with just a splash of orange juice.

The orange juice flavor in this cocktail is to my liking, on the subtle side, but if you like to really taste the orange juice just add more.

The addition of ginger beer changes the flavor of the champagne just enough to make it feel different. (And I love how ginger tastes with champagne).

But you still get all that bubbly goodness.

I served mine over ice in a copper mug, but you could also make this and serve it in a champagne flute or wine glass. (Or whatever glass you want).

Ways to make it your own

Add another flavor, like grenadine and turn it into a sunrise mimosa! If you’ve ever had my Vodka Sunrise, you know that cherry and orange juice goes really well together.

Make it more like a traditional Moscow Mule and add 1-2 ounces of vodka and some fresh mint.

Skip the orange juice and try using grapefruit instead. It’s tangy and slightly bitter. Or try a tropical juice blend. Both of those flavors would be great with ginger beer.

You can enhance the ginger flavor even more by adding ginger liqueur or ginger syrup.

Frequently Asked Questions

What kind of champagne should I use?

Use any kind of champagne you like! It doesn’t have to be expensive especially since you will be mixing it with other flavors. But it should be drinkable on its own. If it isn’t you should never buy that brand again. And you can swap out the champagne and use prosecco, cava, sparkling wine, etc.

What can you do if you don’t want to open a full bottle?

I usually always have a can of sparkling wine (I love Underwood cans from Union Wine Company) on hand which is awesome for making just a few of these cocktails. Canned wine is my secret weapon for topping drinks or making a quick float so you don’t end up wasting a whole bottle.

Can you use fresh orange juice?

Yes! That would be extra delicious. But typically it’s easier to use store-bought. Especially if you are making these for a crowd. If you want to make fresh orange juice it will add extra flavor to the drink and show your guests or whoever you are making them for that you are awesome.

Can you add vodka to make it more like a Moscow Mule?

Unlike a traditional Moscow Mule which has vodka, I decided to skip it in this recipe and just stick with some bubbles. My family is full of lightweights, especially for breakfast drinking. One champagne cocktail and I’ll need a nap. But if you like to rage, then, by all means, add an ounce of vodka. Just don’t say I didn’t warn you if you a) fall asleep in your Breakfast Skillet or b) end up with a lampshade on your head.
