This Lucky Charms Cookies recipe requires no dough chilling time! In fact, you can whip up a batch of these easy Lucky Charm cookies in just 30 minutes. A quick swirl of frosting and a few extra colorful marshmallows is all the decoration they need.

The buttery and soft chocolate chip cookie base uses pantry staple ingredients that you likely already have at home. These easy cookies are great to make from scratch (even for beginning bakers).

The Lucky Charms marshmallows are the best part of the cereal, right? So they make a super fun addition to an otherwise simple cookie. They give the dough a little flavor boost and add some fun rainbow colors too.

Lucky Charms Cookies are the perfect dessert to serve for St Patrick’s holiday celebrations. But they’re also fun for any colorful party, including rainbow color schemes.

What you need to make homemade Lucky Charms Cookies.
  • butter
  • brown sugar
  • egg
  • vanilla extract
  • baking soda
  • salt
  • flour 
  • white chocolate chips
  • Lucky Charm marshmallows
  • cream cheese
  • marshmallow cream fluff
  • powdered sugar

I prefer having control over the ingredients used by making the cookie dough from scratch, but if you’d prefer the convenience of using pre-made Lucky Charms cookie dough, both the Lucky Charms brand and Pillsbury offer this with marshmallow bits included! 

The white chocolate chips added to the cookie dough provide extra sweetness and decadence to these scrumptious cookies. You could leave them out if you wish, use chopped white chocolate instead or even semi-sweet chocolate chips.

Always allow ingredients, such as eggs, butter, and cream cheese, to soften at room temperature for easier mixing and better texture in the dough and frosting. 

Marshmallows tend to melt when baked. Adding the marshmallow fluff evaporates less in baking and helps to give the cookie a nice chewy texture.

How to Make Lucky Charms Cookies

Step 1

Cream the butter and brown sugar in a bowl of a stand mixer until smooth.

Step 2

Add the egg and vanilla and mix to combine.

Step 3

Add the salt, baking soda and flour, mixing these dry ingredients just until they are combined.

Add the white chocolate chips and marshmallow bits into the mixing bowl.

Step 4

Fold in until evenly incorporated throughout the cookie dough.

Step 5

Transfer uniform scoops of cookie dough on a baking sheet lined with parchment paper, using an ice cream scoop. The scoops of dough should be at least 2 inches apart to allow for spreading.  

Bake the cookies in the preheated oven for 10-12 minutes or until the edges are golden brown and the centers are set.

Let the cookies cool completely before frosting.

Step 6

To make the frosting, first combine the cream cheese, butter, and marshmallow fluff in the bowl of a stand mixer.

Step 7

Add the powdered sugar and vanilla extract, and mix on low speed until combined. Increase the speed to medium for an extra minute, or until the frosting is smooth and fluffy, scraping the sides of the bowl to mix in as you go along. 

Transfer the frosting to a piping bag.

Step 8

Pipe a spiral of frosting on the top of each cooled cookie and decorate with additional marshmallows.

TIPS

  • As you can see from the photos, the marshmallows don’t hold their shape when baking but they do add fun rainbow colors to the cookie. I suggest pressing in a few cereal pieces into the top of each cookie dough once you’ve put on the baking sheet. And make sure you save some to put on top of the frosting too.
  • If you’re using the marshmallows from the box of Lucky Charms cereal, make sure to pick out the cereal. Get the kids to help you! Alternatively, try to source the bags of Lucky Charms marshmallows online or in certain stores. This is tedious and I don’t recommend picking them out of the cereal.
  • Using an ice cream scoop when dividing the dough will help create uniform-sized cookies that will bake evenly. 
  • If the frosting has become a bit dry, add a splash of milk or heavy cream and stir to loosen the mixture. This is especially helpful if you’ve made the frosting the night or day before assembling these cookies. 
  • The cookies must cool completely before topping them with the frosting, or you’ll end up with a runny mess!

Variations


  • DAIRY-FREE – Dairy-free butter or coconut oil can be used instead of regular butter in the cookie dough, and the cream cheese frosting can be replaced with a dairy-free buttercream frosting or omit the frosting completely!
  • PRE-MADE – If you’re in a rush for time or looking for added convenience, consider purchasing pre-made white chocolate chip cookie dough that you can simply add the Lucky Charms marshmallows to, or purchase Lucky Charms packaged cookie dough!
  • ADDED FUN – Include rainbow sprinkles in the cookie dough and as decoration on top of the frosting. This will help amp up the rainbow colors as well. Bits of Lucky Charms cereal could also be used as a topping!
  • SANDWICH COOKIES – Get creative and pipe the cream cheese frosting between two cookies to make Lucky Charm sandwich cookies.

How should I store these Lucky Charm Cookies?

Lucky Charm cookies with cream cheese frosting will need to be stored in an airtight container in the fridge for up to 3 days due to the dairy-based ingredients. Keep in mind that the marshmallows will soften in storage.

Can I freeze these cookies?

Yes, although I recommend doing so without the frosting and marshmallow topping. Store the unfrosted cookies in an airtight container or freezer-safe bag for up to 3 months. Thaw at room temperature and assemble with freshly made frosting and fresh marshmallows.

Can I use the Lucky Charm marshmallows in the cereal?

You can, but you’ll need to separate the cereal from the marshmallows. This recipe calls for ½ cup of marshmallows plus extra for the topping, so as long as your box of cereal has that amount of marshmallows, you should be fine!
