Easy Blue Cheese Potato Chip Nachos With Bacon Are The Perfect Appetizer

Blue Cheese Potato Chip Nachos with bacon are crazy delicious! Your guests will love this sweet, salty, creamy combo with the perfect tang of Castello Traditional Danish Blue Cheese.

Maybe it’s the crunch. Maybe it’s the melted cheese or the other fun toppings you can add. Nachos are always great party food. It never fails.

Potato Chip Nachos are not as common to serve and, therefore, even more exciting to your party guests.

They are just as easy to make but use different flavors. The blue cheese sauce, with that blue cheese tang, makes a luscious, unique sauce that pairs perfectly with the salty potato chips! 

This recipe has strong flavors that not everyone is a fan of. But I could eat this whole pan. YUM! Also try my Blue Cheese Steak Bites.

Blue Cheese Potato Chip Nachos Ingredients

  • Potato chips: choose a hearty chip (like a Kettle chip), not a thin one.
  • Castello Cheese Danish Blue Cheese: Not all blue cheese is created equal! The Castello Traditional Danish Blue Cheese is my favorite to use for these Blue Cheese Nachos.
  • heavy cream
  • milk
  • garlic powder
  • black pepper
  • bacon: To keep things really simple, I used pre-cooked, microwavable bacon. It took just 30 seconds to cook and I used kitchen shears to chop it up. 
  • green onions, optional
  • 1-2 TBSP balsamic glaze for drizzling: Balsamic glaze adds a touch of sweetness that is the perfect finish to the dish. But, of course, change up this recipe to suit your tastebuds.

How to Make Blue Cheese Nachos

Step 1

Lay out potato chips on a sheet pan.

Add heavy cream to a pan to make a blue cheese sauce for potato chip nachos.

Step 2

In a small saucepan, add cream, milk, garlic powder, and pepper.

Crumble blue cheese for a sauce for potato chip nachos.

Step 3

Crumble the blue cheese with a fork to make sure it melts easier.

On low heat, heat through until cheese is melted, stirring often.

Prepare bacon and crumble. Set aside until ready to use.

Add blue cheese sauce to potato chips on a sheet pan.

When cheese sauce is ready, drizzle evenly over the potato chips.

Top with bacon.

Put the sheet pan in the broiler and heat until chips crisp up and the cheese sauce bubbles and darkens in spots.

Set out some small plates and let the guests serve themselves!

Tips

You’ll notice that when using a smooth cheese sauce for the nachos, instead of shredded cheese, they don’t look like traditional nachos.

The chips will soak up a bit of the sauce, but when you broil them, the sauce will bubble up and make the potato chips extra tasty.

This blue cheese sauce recipe is easy to double should you want to make more for your party. Just make the Blue Cheese Nachos in batches as you don’t want these sitting around to get soggy (although they still taste amazing!).

How do you reheat nachos?

The best way to reheat these nachos is either in the oven (350 degrees for about 5 minutes) or in the air fryer (for 2-3 minutes). Avoid using the microwave if possible as that will make the chips soggy.

What do you put on nachos?

The toppings that work best on these blue cheese nachos are bacon (duh), green onions or chives, you could absolutely add shredded chicken, a drizzle of buffalo sauce would be great with the blue cheese or drizzle some honey if you love that sweet/salty combo.

For my parties, I always like to serve a unique recipe, like the Potato Chips with Blue Cheese Sauce, along with a small cheese board which I know everyone loves.

For my cheese plate, I used the Creamy Havarti (mild and creamy with a hint of tanginess) and the Smoked Gouda (lightly smoked with a rich flavor).

A few crackers, some salami, and almonds, and you have a snack that will draw your guests back throughout the party.

Notes

You can use regular balsamic vinegar if you don’t have the glaze. You just may want to test how sweet it is before adding. Some store brands can be too vinegary, but a sweeter one will work fine. 
You can also make a balsamic glaze by cooking down a good quality balsamic vinegar so that the flavor condenses as the water cooks out.

  1. I think you meant to say balsamic glaze. It adds a sweet element to cut the salty, tangy richness of the chips and blue cheese sauce.
