Appetizers are always a good idea because they keep your guests happy. I love to have something ready for my friends to snack on when they arrive. Not only does it help to alleviate my stress for getting the rest of the party spread out, but it also ensures they feel taken care of.

I especially love Triscuit recipes, like these Blue Cheese Steak Bites, that can be made ahead of time. I try to do as much as I can before my friends get here so I can finish up anything else I need to serve (a full meal or a grazing table) and then focus on enjoying their company.

These flank steak appetizer bites come together pretty quickly and are great for serving at room temperature. 

We usually have TRISCUIT Original Crackers around the house to snack on. And, of course, you can always serve them, plain, on a food table.

But they are such a great salty cracker base for all kinds of toppings! They are so much more than just a cracker. A Triscuit appetizer is quick and easy and you can top them with all kinds of things.

From meat and cheeses to jams, etc. they are hearty and don’t get soggy or break down quickly, which is key when you are topping it with your favorite things.

The combination of blue cheese and flank steak is a dream. They’re creamy, salty and a great recipe to serve at a party.

To ensure that you have the right amount of ingredients you first need to have an idea of how many finished steak bites you want to make overall.

The 2-pound flank steak will give you way more than enough meat for a bunch of steak appetizers. I had a lot left over. With one red onion, I could make about 24 appetizers. 

You can also use skirt steak but sometimes that can be harder to find. It has a little more fat and flavor but is maybe a little bit tougher.

I love the tang of blue cheese crumbles but you can use something else you may like better, like goat cheese, feta or gorgonzola.

Fresh thyme is the perfect finishing touch. So is the balsamic vinegar. But you could use a balsamic glaze (reduced down, a little thicker and a little sweeter) if you prefer.

How to make this blue cheese steak appetizer

Grill the steak

  1. Use garlic salt and pepper to season the flank steak.
  2. Grill or cook the steak to your desired doneness.
  3. While the meat is cooking, grill or saute onions until they are soft (about 10 minutes).
  4. Let the steak rest until it is cool enough to handle.
  5. Thinly slice it across the grain.
  6. Chop the grilled onion.

Assemble

To assemble the appetizers with steak, layer a piece of steak, some grilled onion and blue cheese crumbles on top of a TRISCUIT.

Drizzle with a little bit of balsamic vinegar.

Add a few leaves of fresh thyme. 

If you don’t want to make them ahead, you can set out the ingredients for the steak bites and have your friends build their own.

All it takes is a little layering, and you’ve got a super simple, totally delicious Triscuit Appetizer idea.

  • Grill flank steak to your desired doneness.
  • At the same time, grill your sliced red onions until they are charred and soft, about 10 minutes.
  • Let steak rest and when it is cool enough to handle, slice thinly, across the grain.
  • Chop grilled onions.
  • For each steak bite, layer a piece of steak, grilled onion, and blue cheese on top of a TRISCUIT.
  • Drizzle with a little bit of balsamic vinegar.
  • Top with fresh thyme.

Notes

*The amount this makes depends on how many you want to make. With a 2 pound flank steak, you could probably use the whole box of TRISCUIT crackers and still have meat leftover (which is never a bad thing!) This is why I put 1-2 red onions. I used 1 red onion and had enough to make probably 24 steak bites.
