White Chocolate Popcorn Recipe with Cake Mix for Christmas

This easy White Chocolate Popcorn with Cake Mix makes a delicious sweet and salty treat that is perfect for holiday snacking and gifting!

Crunchy popcorn is coated in a mix of creamy white chocolate and dry cake mix to make a festive dessert that barely even needs a recipe. So simple!

This easy recipe for Cake Batter White Chocolate Popcorn can do double duty as a sweet snack or edible gift making it perfect for the holiday season.

Growing up, my mom always made treats to have out in the weeks leading up to Christmas. It created a celebratory feeling in our home even though it was usually just my immediate family.

Making a batch of this simple sweet popcorn is quick and easy. And making a few batches for sharing with others doesn’t require much extra effort.

I recently learned that the floral department of my local Albertsons store is a goldmine for holiday preparation! From seasonal bouquets (that can be broken down to create smaller ones!) to festive candles, you need to check it out on your next trip.

How to make White Chocolate Popcorn

Ingredients

To make this treat you’ll need lightly salted popcorn. The easiest way to get a large amount of popcorn without having to make it is to use pre-popped popcorn bags found in the chip aisle. (That’s really a time-saver, especially if you are making a bunch of batches).

You could also use an air-popper and make your own. In my Caramel Corn Recipe, I usually use a microwave air popper but it takes several rounds to get enough.

White cake mix is a wonderful flavor addition. You only need a small amount so one box can easily make several batches. (I love using cake mix in my desserts! It’s truly an over-looked “spice”).

Signature SELECT White Chocolate Baking Chips are tasty! When melted and mixed with the cake mix, the flavor is subtle and sweet and delicious on the popcorn.

To make the white chocolate popcorn extra festive, I grabbed O Organics® chocolate chips, and Signature SELECT Food Coloring and Rainbow Sprinkles.

While I made the cake mix popcorn holiday themed, you can make it fit any occasion or time of year.

There are two helpful products that will make creating this holiday treat super easy.

A large disposable baking dish makes stirring the popcorn a breeze that you can just toss when you’re done. No pan clean up is awesome!

Signature SELECT Wax Paper ensures that the popcorn won’t stick to the cookie sheets as it dries. And again, makes clean up super simple.

Directions

Add the popped popcorn to a large disposable pan. Since I decided I wanted to make 2 colors, I reserved a small portion of popcorn in another bowl.

In a microwave safe glass bowl add your white chocolate chips. Follow the melting instructions on the package if there are any.

I put mine in for 30 seconds and then stirred. I put it back in for 15-second intervals stirring each time. You don’t want to overheat the chocolate. It is done when there are still some clumps.

Just keep stirring and those clumps will melt.

Add the cake mix and stir well. It will change the consistency of the chocolate for a minute but if you keep stirring it should go back to looking like regular melted chocolate.

I poured most of the white chocolate on to the popcorn in the disposable baking dish, again reserving some to make another color.

Coat the popcorn

Gently stir to coat the popcorn with the white chocolate cake mix mixture. Try not to break up the popcorn as you stir but fold the melted chocolate onto the popcorn.

Try to scrape up any melted chocolate that falls to the bottom of the pan and that all of the popcorn is well coated.

Customize with color

With the remaining white chocolate, I added Signature SELECT green food coloring. I used about 6 drops and mixed it into the already melted white chocolate.

I added it to the bowl with the remaining popcorn and mixed well.

Add toppings

While White Chocolate Popcorn with Cake Mix is delicious on its own, you can add in anything you want.

I added O Organics Chocolate Chips and Signature SELECT Rainbow Sprinkles in green and red.

You could also use holiday themed candies, crushed peppermint candy canes, anything you want.

When adding toppings, be sure to press them into the wet chocolate to get them to stick as much as possible.

I think they look better when added after the popcorn is coated, but they stay better when mixed in with it. Keep that in mind and make a decision based on what you prefer.

Spread the chocolate coated popcorn out onto the wax paper lined cookie sheets. Try to get it into a single layer but the chocolate will make it sticky.

Let the white chocolate harden for about an hour.

Then just break it apart into yummy chunks!

What I love about the recipe is that the cake mix softens the flavor of the white chocolate. My kids aren’t big fans of white chocolate but there is something about the cake mix that tones it down.

Serve the popcorn

To serve, place it in a serving dish or bowl. The small Debi Lilly Design Glossy Christmas Glass Compote Dish is a great option. It’s a perfect party treat!

And if you scroll back up you can see how I used one of Debi Lilly’s Green Holiday Mason Jars as a way to gift it! I just put some popcorn in a cello bag and tucked it into the jar.

Not only would the recipient get a delightful snack, but they can also reuse the jar as a vase or serving dish.

How to store the popcorn

Store the popcorn in an air-tight container. It should last for about 5 days. The moisture in the white chocolate can make the popcorn not as crunchy as it should be.

But the taste never fails!

Cake Batter White Chocolate Popcorn

Make this easy Cake Batter White Chocolate Popcorn for friends and family this holiday! With a creamy coating and festive sprinkles, this delicious snack is one of our favorite Christmas treats.

Prep Time 15 minutes
Cook Time 3 minutes
Chill Time 1 hour
Total Time 1 hour 18 minutes

Ingredients

  • 12 cups popped popcorn, lightly salted
  • 16 ounces white chocolate chips (1 1/4 bags)
  • 1/2 cup of dry white cake mix
  • 1/4 cup sprinkles and add-ins, like chocolate chips and colored sprinkles

Instructions

  1. Place popped popcorn in a large disposable pan.
  2. Melt white chocolate in a microwave-safe dish as per instructions on the package.
  3. If no specific instructions are given, start with 30 seconds, then stir. Continue cooking with 15-second intervals, stirring between each.
  4. Stop when there are still a few visible chocolate chunks. Stir until the chunks have melted.
  5. Add the dry cake mix and mix until incorporated. It will change the consistency of the chocolate for a minute but keep mixing and it will blend in.
  6. If using food coloring, add it now and stir to combine.
  7. Pour the white chocolate and dry cake mixture over the popcorn.
  8. Stir gently to evenly coat the popcorn.
  9. Spread the popcorn out on the wax paper-lined baking sheets. Top with sprinkles, chocolate chips or holiday candy.
  10. Press the add-ins into the sticky white chocolate popcorn with your hands.
  11. Let cool completely, then break the coated popcorn into smaller chunks.
  12. Store in an air-tight container. The coated popcorn should last for about 5 days.

Notes

To save time, use pre-popped bagged popcorn.

To make sure the additions of chocolate chips, sprinkles, etc. stick to the chocolate the best, mix them in before spreading on the sheet pans to cool.

This recipe is easy to make several batches of. To gift it, wait until the popcorn is completely dry then package in clear cello bags. Tie with a twist tie and add a decorative tag.
