This Chicken Fajita Soup is perfect for fall!
This Chicken Fajita Soup recipe came out of the Trim Healthy Mama’s Trim Healthy Table cookbook. If you haven’t heard of the Trim Healthy Mamas, get ready to fall in love. I’ve been on a quest to change my lifestyle to be more healthy. I’m done with diets. I want something I can do forever, that I’ll enjoy and also not grow out of my pants.
This book is EXACTLY WHAT I’VE BEEN LOOKING FOR! The focus is on whole, unprocessed foods (sayonara Pop Tarts) and looks at the whole family and each individual’s dietary need so you only have to cook one meal! These sisters know what they are doing! And we’re so lucky they share their knowledge and recipes with us! The book features not only quick and easy recipes that your family will love, but also great information on how to set yourself up health success. Whatever health goal you may have, whether it’s loosing weight, maintaining or like me, wanting to eat in an overall healthful way, this book is perfect for it. When I read the recipe for Chicken Fajita Soup, I knew I had to try it. My family loves all these flavors and there was very little effort needed to put this easy slow cooker soup together.
What I really love about this cookbook is that, for each recipe, the sisters show you ways to change it up to suit your family. I made the basic recipe for this first go around but next time see how I can easily modify it to make it even better for our family’s needs (like, kids NEED fats!).
Mixed in with the recipes and gorgeous images are personal stories from their readers who have made huge changes to their health thanks to the Trim Healthy Mamas. I geek out over wonderfully designed cookbooks and this one slays. I’ve never said anything slayed before (except for Beyonce, duh), but this book is amazing. The fun floral prints mixed through the book makes this girly and cool.There are all different kinds of recipes in the book including single serving meals (perfect for your lunch!). But with 18 kids between the two sisters, they understand feeding large families, or freezing a portion for an even easier night later in the month.
The tips and tricks shared throughout the book are great for helping you save time in the kitchen. I fell head over heels for these gals when I saw frozen, chopped vegetables on the ingredients list. That’s my jam.
I felt like the way the girl’s talk about food is very similar to my beliefs. I think things should taste good, promote health but also be satisfying! They explain things in a way that is easy to understand. And why fats are needed for good brain function, etc. This doesn’t go deep and all scientific-y. It’s perfect for busy moms looking to take care of themselves and their families.
From start to finish, the prep on this meal was about 2 minutes. Wahoo! Two types of canned tomatoes were used to help give the soup a depth of flavor. I LOVED that! Instead of having you do all that work, they use what’s available to keep things easy. I want to be their best friend!
The spices used to make this Chicken Fajita Soup made it super flavorful, but not spicy, which was perfect for the kids. At first I was worried that I would need crazy ingredients, as sometimes happens when you are following a meal plan or trying to get healthy.
While the girls do have their own line of products, it doesn’t appear that you have to use them to use this cookbook. Some recipes might be off-limits unless you have a certain, specialty ingredient, but for the most part, this cookbook features recipes that are healthy and easy to make. BUT, at the beginning of the book, they explain the reasoning behind the ingredients and my guess is you’ll probably want to buy them all, like I do! I mean, this was SO easy! I was able to get it started and get right back to momming.
While I made this in my trusty crockpot, they also share tips on using other methods like a pressure cooker. WHICH I TOTALLY WANT TO GET!
My favorite part of this book, I think, (because I have lots of love for it!), is that each recipe includes a snippet on how to work it in to your family meal plan. Like, for this easy slow cooker soup, they explain how you should eat it based on your goals. Like, adding a piece of sprouted-grain toast or topping it with cheese and avocado. This book is WAY thicker than I expected it to be. But that’s because it is full of recipes and life-changing information.
My whole family loved this soup! The chicken was so tender and made this feel hearty. The spices and peppers added the perfect flavor. It made a lot! Which means, I’ll be freezing some for a later meal! SCORE!

How to make Chicken Fajita Soup in the Slow Cooker
Easy Slow Cooker Chicken Fajita Soup
This recipe is full of flavor and easy to put together. It's a perfect weeknight dinner idea when the weather cools downs!
Ingredients
- 2 1/2 pounds boneless, skinless chicken breasts or thighs, thawed if frozen
- 2 quarts chicken broth, with an optional 4 TBSP Just Gelatin or Integral Collagen
- 1 10 oz can Ro-Tel-style diced tomatoes and green chiles
- 1 14.5 oz can fire-roasted tomatoes
- 1 10-12 ounce bag frozen small-cut seasoning blend (Sharon's notes: peppers, onions and celery or some variation)
- 1 tsp Mineral Salt, Sharon's notes: pink Himalayan is a good one!
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder, or 4-6 garlic cloves, minced
- 1 tsp chili powder
- 3/4 to 1 tsp chipotle powder, optional for an extra-awesome kick
- 1 8 oz package 1/3 less fat cream cheese, optional - but I suggest it! This soup is super yummy when it has a bit of creaminess!
- Lime wedges, optional, for serving
Instructions
- Put all ingredients (except the cream cheese - if using, and lime wedges) in a crockpot.
- Cover and cook on high for 6 hours.
- If using cream cheese, remove 1 cup of the hot broth and place it in a blender with the cream cheese.
- Blend until smooth, then stir into the crockpot.
- After 6 hours, remove the chicken and shred on a plate with 2 forks.
- Return to pot, stir well to combine, and serve with a squirt of lime, if using.
