Pineapple and rum are a flavor match made in heaven. The sherbet adds a creaminess that is still refreshing and wonderful to sip by the pool.

My pineapple and rum cocktail is a drink and dessert in one and only needs a few ingredients.

Spiced rum has so much flavor and makes this drink feel super tropical. The 7UP gives it some sweetness and the perfect hint of citrus, without being too sweet.

A spoon is really the only thing you need to make this pineapple and rum drink, which makes it almost foolproof.

What you need for this boozy Pineapple Float with rum.
  • Spiced Rum
  • Pineapple Sherbet
  • Pineapple Juice
  • 7UP
  • Fresh nutmeg, optional

I love using spiced rum because it contains warm spices like cinnamon, nutmeg, clove, etc., that add so much flavor to any drink. You could also use light or dark rum, but it will be missing those spiced notes.

Pineapple sherbet is tropical and perfect for this. Rainbow or orange sherbet can be used but will change the taste a bit.

There are other brands of lemon-lime soda on the market, but I really enjoy 7UP in this drink. If you don’t have 7UP or can’t find it, I would use store-bought soda over another big brand. Those have a better flavor in my opinion.

How to Make This Pineapple Float

Step 1

To a short cocktail glass add the spiced rum, 7UP and a splash of pineapple juice. Give it a gentle stir.

Add a scoop or two of pineapple sherbet.

Step 3

Grate a little fresh nutmeg on top (or use a sprinkle of what you have in your cupboard).

Tips

  • I love to grate fresh nutmeg which is especially fragrant. It’s the first thing that you experience when you bring the drink to your lips. Yum!
  • You can turn this into an equally delicious non-alcoholic mocktai by leaving out the Spiced Rum!

Ingredients

  • 1 oz Spiced Rum
  • 4 oz 7UP
  • 1 splash Pineapple Juice
  • 1-2 scoops Pineapple Sherbet

Instructions

  • Add Spiced Rum, 7Up and pineapple juice to a glass. 
  • Stir well.
  • Add 1-2 scoops of pineapple sherbet.
  • Top with fresh grated nutmeg, optional

Notes

You don’t need to measure to make this recipe. Simply use 1 part rum to 4 parts 7UP plus a splash of pineapple juice.
I would guesstimate that a splash of pineapple juice is about 1/2 – 1 ounce. 
Make this non-alcoholic my leaving out the spiced rum.
