    Easy Gluten Free Blueberry Dump Cake Recipe

    We recently found out that my husband has some issues with gluten. He’s not allergic but it makes him have a sneezing fit!

    So once in a while, I try to modify one of our favorite recipes (and you know I love dump cakes) to help him out. This easy Gluten Free Blueberry Dump Cake is a simple dessert I can make for him.

    I am not a gluten-free baker, so this recipe could probably be improved. But it works for us, It’s delicious and I thought you might like this recipe too.

    Simple Mills sent me several boxes of Gluten Free Cake Mix to use for this recipe.

    Gluten Free Blueberry Dump Cake is so Easy!

    Sneezing is no big deal. But it is funny. We used to call it his 9 pm sneeze attack because it always seemed like he had one around that time. 

    But he recently found out that he sneezes when he eats gluten! We are grateful that this is his only symptom as I know that a gluten allergy is terrible for most people! 

    If you HAVE to eat gluten-free, please use your expertise to go over my ingredients to make sure this is right for you. If it isn’t, please modify it to keep yourself safe.

    My Favorite Gluten Free Cake Mix to Use

    From time to time, I like to reevaluate what I’m eating and check out brands that look like they are better for you. I found Simple Mills at my local natural store and tried their crackers and cookies. YOU GUYS! 

    They are delicious! Most of the products use almond flour and the flavor is so tasty! When I knew I wanted to try to make a gluten free Blueberry Dump Cake, I had to use this cake mix! 

    But I will warn you. It doesn’t act the same as a regular cake mix when making a dump cake.

    Blueberry dump cake without pineapple is delicious. It’s full of that yummy blueberry flavor without any of the texture of the crushed pineapple. The lemon juice and zest help to brighten up the canned fruit and give it just a touch of zing. 

    Yes, that’s a culinary term. Just kidding. 

    How to Make Blueberry Dump Cake (Gluten Free)

    Ingredients:

    • 2 cans blueberry pie filling
    • 1 box Simple Mills Vanilla Gluten Free Cake Mix
    • ½ oz. lemon juice
    • 1 tsp lemon zest
    • 1/2 stick of butter

    The flavor of the Simple Mills vanilla cake mix is graham crackery and delicious. It pairs really well with the sweet blueberries.

    I’m telling you the flavor is here, guys. It’s just the texture.

    Between the moisture from the butter and the canned fruit, the topping on this is kind of soupy.

    Unlike standard dump cakes, it never really hardens up. But this blueberry dump cake recipe is so dang tasty. 

    This is why I decided to post this even though I know it’s not perfect. 

    There must be a way to turn the cake mix into a crumble to put on top. But I haven’t tested it out yet. 

    Here is a pie crust made with Simple Mills. Maybe you can make it per the recipe and then crumble it up on top?

    Instructions:

    In a 9 x 13 pan, our in two cans of blueberry pie filling.

    Add 1/2 oz. of fresh lemon juice and 1 tsp of lemon zest and give it a quick mix with the blueberry filling.

    Top with 1 box of Simple Mills Vanilla Gluten Free Cake Mix.

    Drizzle 1/2 stick of melted butter over the top.

    Bake in a 350 degree oven for about 45 minutes, until golden brown.

    Gluten Free dump cake is just as tasty and a regular recipe. As you can see from the photo, the topping does brown up. I even left it in a little longer than I probably should have so I could see if it would harden up at all. 

    It didn’t. But I’m telling you…yum!

    This easy blueberry dump cake is a great one to make if you have company coming over that is gluten free. I just suggest keeping the cake mix box so they can look at it themselves.

    My youngest son had a lot of food allergies when he was little and I know it always made me feel better if I could check the box myself! 

    Like their gluten-full counterparts, this easy dessert is a great one to make for parties. They couldn’t be quicker and if you have the Simple Mills cake mix on hand, you can make this whenever you need a special dessert.

    Ingredients

    • Top with 1 box of Simple Mills Vanilla Gluten Free Cake Mix
    • Drizzle 1/2 stick of melted butter over the top.

    Notes

    You may need to modify the amount of butter used. I tried my usual 2 sticks and cut it to one and it made the cake mix too goopy. Next time I will use 1/2 stick and potentially go to 3/4 stick depending on the results. The flavor is delicious, it’s the texture that I can’t get right!
