There are a few desserts that I crave. And I’m just too lazy to make them.
Which is probably good because I’d end up weighing 400+ pounds. Banana Pudding Pie is one of those things I dream of from time to time. But it’s far too many steps.
These easy Caramel Banana Bites are the way to go. You get all the flavors without the work! And they make a great after school snack idea!

This recipe (which is hardly a recipe – just the way I like it) makes quick and easy after school snacks that your kids are going to love. And you will too.
Caramel Banana Bites After School Snack Idea
Ingredients
• Vanilla Wafer Cookies
• Bananas
• Whipped Cream
• Caramel sauce
Directions
• Lay your cookies flat on a platter or plate
• Slice your banana and lay a banana slice on top of each cookie
• Top each banana with whipped cream
• Drizzle caramel sauce on top
The base for these banana bites are Nilla Wafers (which I ate an entire box of when I bought them at the request of my youngest…Don’t tell him. They were gone before he even got home from school).
They make a sturdy cookie base that tastes a bit like pie crust. I love one bite finger foods for our after school snacks so these are perfect. Then you just need to place a sliced banana on top of the cookie. See, easy.
The creaminess is brought with some whipped cream. There isn’t any pudding in these caramel banana bites, but they are still creamy and full of banana flavor.
If I’m being totally honest. I don’t really like bananas. But I can get on board when there is a crispy vanilla cookie and some whipped cream.
Whipped cream always makes everything taste better.
The caramel doesn’t hurt either. I used a store-bought caramel sauce (again to keep things extra easy but if you’re up for making it you can use this recipe).
A little drizzle on each cookie is just enough to add the flavor without getting messy. Of course the kids like this idea for after school snacks, but my husband really enjoyed them too.
These are the perfect thing to throw together when you want a sweet little treat that doesn’t require baking, etc. Of course you can make a mug cake, but these are even easier!
You can make these a little more sophisticated by adding a little bit of sea salt on top.
I think I’ve finally gotten my kids on board with salted caramel. It feels like winning the lotto.
I think they underestimate my level of dessert loving expertise. Salted desserts make sense.
Kids snacks are the best, right? These banana bites really do help me handle my craving without slaving away in the kitchen.
I will say that the last time I verbalized a need for banana pudding pie, my bff had someone make it for me when I visited her…
I don’t have any trips planned to her house in Texas at the moment but maybe someone else will surprise me! I call this dessert manifesting…
