Why I LOVE this recipe!

This fish taco recipe with fish sticks took me hardly any time to make and tastes delicious. I call that a weeknight dinner win!

I ran into my girlfriend, Trudy, at the store a few weeks ago. We chatted about fast meal ideas, as you do. She mentioned making fish tacos with fish sticks and I slapped my forehead. Totally genius.

So I stole her idea (which she stole from a friend so it’s ok…)

Honestly, these tacos are the epitome of semi-homemade.

I knew the Southwest Eat Smart Gourmet Vegetable Salad Kit was the way to go. The Southwest kit starts with five superfoods: savoy cabbage, red cabbage, red radishes, carrots and kale.

If you can’t find this particular salad mix, feel free to use cabbage, pre-bagged coleslaw or shredded lettuce instead. Anything that makes this recipe super easy to manage on a weeknight!

The package also contains dried corn and tortilla strips (that provide the perfect crunch!), some cheddar cheese, and a chipotle dressing. All of those things make this perfect to fill a taco.

Each of the 7 varieties contains superfoods and is a complete salad meal. And these kits get it right. They all have a little bit of crunch or texture that makes this a legit salad, one that you WANT to eat.

But I love them, even more, when they can cut out time from meal prep. You can try different flavors in these tacos depending on what your family loves. Obviously, the Southwest flavor is perfect for Fish Stick Tacos.

But you can use these to make stir-frys, soups, add them to sandwiches and so much more!

Directions

A fish stick taco on a white plate surrounded by fixings.

  2. Layout your corn tortillas.
  3. Add a handful of the Southwest salad mix.
  4. Top it with 2 fish sticks.

More Topping Ideas & Variations

  • To bring in more flavor I used a squeeze of fresh lime, some cilantro and cotija cheese (it’s so good and salty!).
  • I finished off my taco with a little bit of the chipotle dressing, but any creamy, slightly spicy sauce would be good here.
  • Add Pico de Gallo (homemade, or both Trader Joe’s and Whole Foods do really good ones)
  • Guacamole or diced avocado is always a good idea!

You can also skip the taco altogether and make a fish stick salad or fish stick taco bowl with the salad mix as the base!

Frequently Asked Questions

Are there any alternatives to fish sticks in this taco recipe?

If you’re not into the fish stick idea, that’s totally cool. Just use another kind of fish. Or even ground beef or chicken.

Can I make the fish sticks in the air fryer?

Yes! If the pack does not include air fryer instructions I usually follow the oven instructions but check the fish sticks with 5 minutes to go as they may cook a little quicker in the air fryer.
