Quick and Easy Vegetarian Breakfast Skillet with Maple Breakfast Patties

Cooking a breakfast my whole family loves can be very difficult. Some of us like bacon, most of us like eggs, and one person is trying to be vegetarian—it’s hard to make something everyone will eat. I figured out that a delicious Vegetarian Breakfast Skillet is the way to make everyone happy!

A Vegetarian Breakfast Skillet is a Great Start to the Morning

I prefer simple recipes, especially on busy mornings. While breakfast is my favorite meal, the rest of my family does not feel the same. They like grab-and-go items but at least once a week, I make this easy breakfast.

This breakfast hash comes together quickly and makes enough to feed my whole family before they run out the door for the day.

Will My Non-Vegetarian Family Members like This Recipe?

YES! While my youngest son is trying out life as a vegetarian, the rest of us are not. The base of this yummy vegetarian scramble is delicious, but it’s the maple breakfast patties that really makes this special. It adds the perfect amount of flavor and texture to make this dish feel hearty.

How to Make a Vegetarian Breakfast Scramble

Ingredients:

Pure Farmland products are a great source of protein, which I’m always struggling to make sure my family is getting enough of. They are made with natural flavors and are dairy and gluten-free. 

The Maple Breakfast Patties are found in the refrigerated area of your local Kroger/Ralphs store and are so tasty! They have a subtle sweetness and hint of maple flavor that makes them really versatile and especially perfect for this breakfast skillet for vegetarians

The key to making this recipe as fast as possible is to use pre-shredded potato hash browns. You can make your own, but the idea of grating potatoes in the morning sounds heinous to me. 

I understand that everyone might not have air-dried shallots in their pantry. Typically, I would use real onions, but it takes time to sweat and brown them, so I swap in these shallots. I really love the flavor of onions in this type of vegetarian breakfast scramble, but I just don’t have the time to use real ones. You can substitute onion powder if that is all you have. 

Adding fresh herbs is crucial, in my opinion. They are such an amazingly fast way to add tons of flavor. I’m having a big thyme moment, but you can do chives or something similar. 

I love shopping at my local Ralphs store to pick up everything I need for this yummy breakfast idea. I have the layout down like the back of my hand and can get in and out quickly. The staff is always so warm and friendly, too.

Instructions

  1. Add breakfast patties to a skillet and crumble with a spatula.
  2. Cook 6-7 minutes.
  3. Remove to a plate with paper towels.hashbrowns and dried onions in a skillet
  4. Add potatoes and shallots to the pan.
  5. Spread them into a single layer and let them cook for about 6 minutes.
  6. Stir them and let them cook another 6 minutes.
  7. Remove them to a plate.eggs in a bowl with seasoning and thyme reading to be made into a vegetarian scramble
  8. Mix eggs, milk, seasoned salt and thyme (leaves from about 3 sprigs) in a medium bowl with a fork to scramble.
  9. Add to pan and cook until almost set and not runny.
  10. Add hashbrowns and breakfast patties back to skillet, and mix with the eggs.
  11. Add more fresh thyme.

  • 1/4 tsp Seasoned Salt
  • 1 TBSP Air-Dried Shallots or onion powder
  • Fresh thyme
  • Cheddar Cheese for topping

  • Add potatoes and shallots to the pan.
  • Spread them into a single layer and let them cook for about 6 minutes.
  • Stir them and let them cook another 6 minutes.
  • Remove them to a plate.
  • Mix eggs, milk, Seasoned Salt and thyme (strip about 3 springs) in a medium bowl with a fork to scramble.
  • Add to pan and cook until almost set and not runny.
  • Add hashbrowns and breakfast patties back to skillet and mix with the eggs.
  • Add more fresh thyme.
  • Set out a bowl of cheese to top with, optional.

Serve with some warm, crusty bread. We’re a big bread family. So good.

Topping with sharp cheddar is another great way to add even more flavor. I like to let each person top their own if they decide to. My husband is not a big breakfast guy, so serving this hash brown and egg scramble covered in cheese would be too much for him.

But I love the little bit of extra flavor a handful of cheese provides.

Fresh fruit is a great way to round out the meal. 

This recipe makes enough to feed at least 4 people and might even leave a little leftover. It reheats really nicely! 

I separated out the steps of this recipe to show each part clearly, but you can make these even quicker by cooking the breakfast patties and hash browns at the same time. Then, just add the eggs to the dish and scramble it all together.
