Easy Mediterranean Bowls with Bubba Veggie Burger

These yummy vegetarian Mediterranean Bowls are my favorite fast dinner idea! A mix of fresh vegetables and delicious topping ideas make these bowls easy for each member of our family to put together the way they like them. And the BUBBA Veggie Burgers add delicious flavor and protein to our meal. This is one of my favorite things to make on busy weeknights.
We are a family of meat eaters. But my youngest son is really wanting to try out a vegetarian lifestyle. I am totally open to him eating a different way than the rest of us. But I always want to make sure he’s getting all the protein and nutrients he needs in his diet.
It also doesn’t hurt if we can all eat the same meal and I don’t have to cook multiple things.
This is where it can get tricky. A few years ago, I was super lucky to have the opportunity to attend the Long Beach Grand Prix as a guest of Bubba Burger. I fell in love with BUBBA Foods and their frozen burgers and now they are the only burgers I’ll serve my family (especially when I serve these crazy tasty BBQ Pineapple Burgers!).
When I found out they had some new Veggie Burger options coming out, I knew that my youngest would be excited to try them and I was excited too. 
When BUBBA Burger sent me their Original BUBBA Veggie Burger and the new Veggie with Beets to try, I couldn’t wait to see if they could be something that we add into our go-to dinner ideas.
They’ve also introduced the Latin Grill Veggie, which has plantains, sweet potatoes, lime, cilantro and ancient grains with black beans. And the Veggie with White Beans which has brown rice, garbanzo and white beans with chunks of veggies, kale and quinoa with a touch of sage. Both of which sound amazing! 
These are going to be such a great addition to our meal plan.
We do a lot of “bowls” for our family dinners. Usually, we do taco bowls and each family member builds their own the way they like it. But we’re a little bored with them. I decided that we should change up the flavors and create something fresh, yet still super easy, for the warmer spring months. 
The burgers were easy to cook on the stovetop although the box provides directions to cook them in several different ways. These really are such a versatile product!
How to Make Mediterranean Bowls

Ingredients:
- Fresh kale
- Quinoa
- Shaved Brussels sprouts (the package I picked up at the store also had mushrooms in it)
- Cucumber (chopped)
- Greek yogurt
- Hummus
- Fresh lemon
- Mint
- BUBBA Veggie with Beets Burgers
What I love about making bowls for my family meals is that you can truly make them with the ingredients that your family likes best. My kids are ok with kale but they don’t love raw Brussels sprouts so they usually leave that out. One kid doesn’t love the fresh mint so he can skip it.
I like to set out a mix of toppings I know they love with some new things for them to try. It’s a great way to keep things interesting.
To keep things quick, I use frozen quinoa that takes just a few minutes to cook in the microwave. It’s one of my favorite time savers! I also buy pre-shaved Brussels Sprouts. And while you can take the time to make your own hummus, on busy weeknights, it’s just so much easier to use store-bought! 
- Prepare the BUBBA Veggie Burger with Beets per the package instructions.
Make sure to get a nice sear on the outside (which gives it great texture!). In the last few minutes of cooking, I broke up the burger so the pieces would be smaller for the bowl.
It would work just as well to leave the burger whole and place it on top of the bowl. But seeing how easy it would crumble made it such a great topping idea for these delicious Mediterranean bowls but it also showed me that you could use these burgers in all kinds of other recipes where you wanted to remove meat.
- Build your perfect bowl. (I usually start with a base of kale, add in the Brussels sprouts, add a portion of quinoa and BUBBA Veggie Burger and then add the toppings!
The quinoa can be served warm or cold. Other topping ideas:
- Red pepper hummus
- Tzatziki
- Tomato salsa (think Mediterranean flavors – similar to Mexican salsa but skip the cilantro and lime juice)
- Black olives
- Feta cheese
- Red onion
- Pine nuts

If the bowl is too dry for you, just use a drizzle of good quality olive oil to create a simple dressing.

Mediterranean Bowls with BUBBA Veggie Burgers
Ingredients
- 1 bag chopped Kale
- 1 package BUBBA Veggie with Beet Burgers
- 1 container hummus
- 1 container Greek yogurt
- 1 lemon quartered
- 1 bunch fresh mint
- 1 package frozen quinoa cooked
- small cucumber chopped
Instructions
- Make the BUBBA Veggie Burgers per the package instructions
- To a serving bowl, add ingredients that you like to create a delicious grain bowl. (For example, I love to start with a bed of kale, add Brussels Sprouts, one helping of quinoa.
- Top with crumbled BUBBA Veggie Burger.
- Top with hummus, Greek yogurt, chopped cucumber, fresh mint and a squeeze of fresh lemon.
- Drizzle with olive oil if too dry for your liking.
