Add half the grated ginger, 2 mint leaves and ½ ounce maple syrup to each glass and roughly muddle it.
Pour the lime juice, cherry juice and vodka, and stir to incorporate.
Add the ice and top it off with ginger beer.
Garnish with lime, basil and mint and serve.
Notes
You can make this cocktail in a cocktail shaker if you'd prefer, but be sure not to add the ginger beer unless you want the shaker to explode. Not a good idea! Wait to top off the cherry cocktail until it's in the glass over ice.
To make ahead, mix the drink ahead of time (up to adding ice and ginger beer) in another vessel and keep until ready. Then pour over ice and top with chilled ginger beer just before serving.
