This 2-ingredient Soda Cake Recipe with Coke is a fun and fast way to make a sweet treat for your family. Without eggs or oil, this soda cake hack means you can turn a boxed cake mix into a simple dessert in just a few minutes!
Preheat the oven to 350 degrees and prepare a 9 x 13 pan with oil and flour.
Add the boxed cake mix and 12 ounces of soda pop to a large bowl.
Beat on low speed with a hand mixer for 1 minute.
Beat on medium speed with a hand mixer for 2 minutes.
Pour cake batter into sheet cake pan and bake in the oven for 30 minutes.
Let cool to room temperature. Then serve.
Sprinkle with powdered sugar, if desired.

*NOTE: Be aware that the finished cake is way more crumbly than a regular cake (if baked in a bundt pan). Make sure to cook it all the way through so it isn't gummy. Flavor and texture-wise, this cake is more of a fun hack than something you would want to serve company. (Try this Chocolate Truffle Cake instead).
While I used a bundt pan to make this Soda Cake (shown in the photos), next time I make this 2-ingredient cake I would use a 9 x 13 sheet cake pan. Due to the consistency of the cake (it's pretty crumbly) you want smaller pieces that won't fall apart. A cupcake tin would also be great!
Be sure to cook this cake well. The consistency can be gummy if not cooked long enough. The top of the cake will look golden, but cook for a little bit longer to ensure that the bottom is ready.
