Goat Cheese Pizza with Sausage, Bacon and Brussels Sprouts
I can't get enough of this delicious pizza! The goat cheese spread is super flavorful and pairs perfectly with the Brussels sprouts, sausage and fresh herbs.
In a small bowl, mix the goat cheese, cream, dijon mustard and fresh thyme.
In another small bowl, toss the Brussels sprouts with the olive oil and black pepper.
Lay your flatbread on a cookie sheet and spread the goat cheese on with the back of a spoon leaving a border around the edge of the dough.
Sprinkle about a TBSP of parmesan over the goat cheese spread.
Top the pizza with sausage, bacon and Brussels sprouts.
Sprinkle pizza generously with parmesan cheese.
Bake for approximately 8 minutes.
When you are ready to serve your pizza, sprinkle on a little bit more fresh thyme.

Serves about 2 if this is your main course. For my family of 4 I served this pizza as a side and served it with the rest of the Jack Link's Wild Side Sausages Original Flavor (grilled), along with the rest of the package of Brussels sprouts (roasted with a little bit of garlic salt and olive oil). It was delicious!Skip making dough and instead opt for flatbread. It's easy to find at the grocery store and cuts down on your prep time.Although I didn't on this occasion, I usually let the kids put their own toppings on since they have such different tastes. They both love parmesan and bacon so those were a given, but giving them the option to build their own pizza means everyone gets exactly what they want.I usually will make a recipe the way I see it in a book or my head and have the kids try it and then we can modify it the next time we make it.This gets them to try new things and new flavor combinations that they might not ultimately want a whole plate of but at least it gets them to branch out a little. Pizza is a great way to do that.Nutrition may be slightly off as there was no option for Jack Link's sausage in the database.
