If you love a good rum cocktail nothing beats this Classic Mojito Recipe on a hot day. All you need is a handful of fresh ingredients and a cocktail muddler!
To a glass add the lime juice, sugar, lime chunks and mint.
Muddle, making sure you stir with the muddler to help dissolve the sugar.
Add ice and rum.
Top up with club soda.
Give a gentle mix with a bar spoon, brining some of the mint and lime up in the glass.
Notes
To make the lime chunks, cut the lime in half, then half again, and then each of those segments into 2-3 chunks.You can use simple syrup in place of the white sugar if you prefer but I love the way the white sugar helps to bring in some of that lime zest flavor from muddling the two together.
