This quick and easy Beet, Goat Cheese, Arugula Salad is my go-to lunch recipe for friend dates at home! With candied pecans and a simple balsamic vinaigrette, it's a tasty lunch that's easy to share.
To a small jar, add olive oil, balsamic vinegar, salt and pepper. Add lid and shake well.
Remove beets from package and slice into bite-sized pieces.
In a large bowl, add arugula, cut beets and candied pecans.
Pour about half the dressing over salad and toss well. Taste then add more dressing as needed.
Put a portion of salad on your serving plate. Top with a few small pieces or slices of goat cheese.
Notes
Swap out the candied pecans for any other nut or make your own candied walnuts or candied almonds. Even if it's not a candied nut, it will still add the perfect crunchy element to this salad.
Make this salad your own by adding in even more flavor with things like avocado, blood orange segments and more!
