Beet and Goat Cheese Salad
This is one of my favorite salads to make for lunch at home! It's perfect for a mom date with your girlfriends.

Ingredients
1
bag arugula
approx. 6 cups
1
package pre-cooked beets
1
package candied pecans
or other nut!
1
small log of goat cheese
1/2
cup
olive oil
4
TBSP
balsamic vinegar
1/4
tsp
salt
pepper
Instructions
Remove beets from package and slice.
In a large bowl, add arugula, beets and candied pecans.
Mix 1/2 cup olive oil with 4 TBSP balsamic vinegar and 1/4 tsp salt in a mason jar and shake well to mix.
Pour dressing over salad and toss well.
Plate the salad and top with goat cheese slices.
Serve any remaining salad and candied pecans on the table.
