Please tell me I’m not the only one afraid of cooking fish. I really want to add fish to our dinner rotations but I kind of don’t want my house to stink up. Plus, the only times I’ve tried to cook it, I’ve managed to make an awful, mushy mess. Do you know what I’m NOT afraid of, though? Products that aspire to help you get a delicious dinner on the table, fast. In fact, I embrace them. I totally geek out over an entrée that I don’t have to fool with and lets me focus on quick, delicious side dish recipes. Because I kind of excel at those. I can’t wait to share this spring-inspired menu with you. And, yes, I cooked fish!
I don’t have a lot of experience with tilapia, but I know that it is a fish my sister-in-law serves her family. Her family has a few picky eaters so I knew this would be a good, mild fish to serve my own kids. I’ll be honest, I wouldn’t have naturally headed to the freezer section to look for fish to cook. But, I also wasn’t willing to serve fresh fish either. There is a huge benefit to using these Bumble Bee SuperFresh® seafood entrees. NO FISHY SMELLS! These filets are prepared straight out of the freezer so there is no odor that is usually associated with thawing fish! This is big if you a) hate fishy smells (hand raised) and b) if you are trying to make fish more approachable to your kids. The fish is frozen fresh, which means it retains its fresh taste and smell.
With our protein taken care of, I could focus on my favorite part of any meal. The side dish recipes. We eat a lot of broccoli during the week. It’s super versatile and you can flavor it so many different ways. My favorite way to prepare it is roasted. My family loves how it gets all crispy and crunchy in the oven. And while the cooking method I use is generally the same each time we have it, I like to change-up the flavors. Soy sauce and ginger is a great way to add tons of flavor to the broccoli. It comes together really fast and cooks in about 15 minutes.
Do you cous cous? You totally should! It cooks up really fast and, again, you can switch up flavors. Sometimes we use the pre-flavored varieties (which are even more quick to make!) but for this, I decided to make a spring-inspired asparagus and pea version with lemon.
Roasting vegetables is my favorite for an almost hands-off meal! I knew I could cook the asparagus in the boiling water for the cous cous but I just love the extra bit of flavor that roasting brings out. To keep this meal on the faster side (because when your fish only takes about 20 minutes to cook, you want to plan your side dish recipes accordingly!) I roasted the two types of vegetables on one sheet pan. I also hate extra dishes…Seriously. Preparing the fish couldn’t be easier. The Bumble Bee SuperFresh® Tilapia with Lemon, Pepper and Herbs comes with its own parchment paper baking pouch. All you have to do is remove the filet from its wrapper and slide it right in to the pouch. A quick fold at the top and your fish is ready to go. They bake on a sheet pan for about 20 minutes and the steam created in the pouch helps the fish to cook perfectly. The filets are flavored with simple, flavorful ingredients. Fresh lemon mixed with olive oil, shallots and black pepper season the fish well but allow the clean, fresh flavor of the premium tilapia to shine through. Since I love these side dish recipes and use them all the time, I figured you may want to make them too. Here is the recipe for Roasted Soy Sauce Broccoli. Read on to see how I prepared the is full meal and got it on the table in about half an hour. Of course, your first time making something will take longer, but keep in mind that you can make any of these dishes your own by using the flavors your family loves or simplifying these recipes even more!
Roasted Broccoli with Soy Sauce and Ginger
1 small bag of Broccoli Florets (about 3 cups)
1 TBSP olive oil
2 TBSP soy sauce
1 tsp grated ginger
Add broccoli to a gallon sized sealable bag.
Add olive oil, soy sauce and ginger to the bag.
Seal and shake well.
Spread out on cookie sheet and roast in a 400 degree oven for approximately 15 minutes.
I can’t quit with the cous cous! It feels fancier than just serving plain rice and most kids love it! To make this meal quicker, skip the veggies. Add some lemon, olive oil and sea salt to the plain cous cous and you’ve created another simple side dish. Don’t forget, fresh herbs really add a ton of flavor without adding time!
Cous Cous with Asparagus, Peas and Lemon
1 box plain cous cous
1 1/3 cups water
2 TBSP olive oil (divided)
1 small shallot, chopped
1 garlic clove, crushed
1 cup frozen peas
1 cup of roasted asparagus, chopped
1 lemon (you’ll need a few strips of the peel, 1 tsp zest and juice)
4 sprigs plus 1 tsp fresh thyme, chopped
1 TBSP flat leaf parsley, chopped
In a saucepan, add 1 TBSP olive oil and heat to medium.
Add shallot, 4 sprigs of thyme and large pieces of lemon peel.
Saute until shallot is translucent.
Add garlic and saute until fragrant, approximately 30 seconds.
Remove thyme sprigs and lemon peel, discard.
Add water and frozen peas.
Bring to a boil, stir in cous cous, remove from heat and put a lid on and let sit for 5 minutes.
Fluff with a fork.
Add in 1 TBSP olive oil, lemon juice and zest, sea salt (to taste), thyme, parsley and asparagus.

On the day we ate this meal, we met friends at the pool for an afternoon of fun in the sun. Then we came home and I put this meal together in about half an hour. No stress! AND the fish was delicious! My youngest son was crazy for it. He asked for seconds and even packed some leftovers in his lunch the next day! When your family tires of eating chicken, give these a try!
To make this meal quickly using the recipes above:
Preheat the oven to 400 degrees. Start with the cous cous recipe and begin to saute the shallot. In the meantime, prepare your broccoli and asparagus for roasting. Prepare fish filets per package instructions. Place fish and sheet pan of veggies in the oven. Set timer for 15 minutes. Continue with cous cous recipe. Once you add the water and peas, remove from heat and cover. Although the recipe says to fluff with a fork after 5 minutes. It is ok if it sits a little bit longer. Prepare your fresh herbs and lemon juice. Remove veggies from oven and chop asparagus as soon as it is cool enough to handle. The fish may need to cook for a few minutes longer. Remove when ready. Stir in the rest of the cous cous ingredients and plate!
This meal was delicious and between the fish and the side dish recipes, we had a really enjoyable dinner that didn’t take long to prepare!
