With the warmer temperatures and the busy summer schedules, the last thing I want to do is cook dinner! I don’t want to toot my own horn, but I feel like I’m the queen of easy meals. When my first son was born 11 years ago, there were tons of convenient food options available. But none of them were healthy. Then, when we found out about his food allergies, I had to learn how to cook and in turn, realized how unhealthy our family had been eating. That was such a hard time in my life, I was constantly worried about what my son was eating (or wasn’t – like milk). But in every struggle there is always a positive. I feel like I am now able to create meals, that are super easy, that can be healthy and pretty dang delicious. And I KNOW you all want easy meal ideas for summer. Consider this my gift to you.I’ll tell you one of my big tricks. Use things in new ways. And I also look for the companies that are doing it right. What I mean by that, is I look for the brands that bring the quality products, make them convenient and make them delicious. That’s half the work right there. Eat Smart is one of my favorite go-to brands when I’m looking to make easy meals. They have tons of great options that work, not only for dinner, but for lunch too. All the big heart eyes for them. Of course you know them as the maker of Gourmet Salad Kits. In delicious flavors, like Strawberry Harvest, Sweet Kale and Sunflower Kale, these salads are ready to eat and require nothing more than opening the bag. Genius. These chef-inspired kits offer blends of 6 or more superfoods which mean they are healthy, convenient and ready to add in to our busy lives. And the three flavors I mentioned above currently contain a 100% label!!!! That means no artificial colors, flavors or preservatives. Here I’ve served it, along with a pizza that we got delivered, to provide a healthy side dish. It’s all about balance, right? I can’t ever say no to pizza. Or you can just add protein and have the salad be the main course! I’m totally in to their new Salad Shake Ups! It’s basically the same idea as the salad kit but in a super convenient package that allows you to take it with you on the go. It even comes with its own fork! Such a great product for moms. I grab one as we’re heading to the pool so I know I’m eating something good for me. The container features a lockable lid for easy dressing tossing plus a sturdy bowl. These salad kits contain veggies, not just greens, so they are super versatile for using in a bunch of different ways. You may remember that I previously used one kit to create easy fish stick tacos. I also use the kits to make quick stir frys. I just cook up a protein, do a quick saute of the Gourmet Salad Kit and serve over rice (or their riced cauliflower!) with some soy sauce. These would also work well in a quick fried rice. My kids would LOVE that! The crunch of the raw kit makes a perfect alternative sandwich topper! It totally elevates your picnic sandwiches! Plus your able to sneak in a bunch of really good-for-your veggies. I’m kind of addicted to quinoa right now (it’s so trendy, right?!) and these kits would also work really well in a savory quinoa bowl! I always have frozen quinoa on hand which makes everything extra fast. I also love to use the kits to make wraps. We’ve been all about wraps this summer! We use a little bit of the salad dressing on them as well. We make these really fast by using chicken that we’ve already grilled and frozen. That really helps to make speedy meals! I love white pizzas with arugula on top so I’m thinking these salad kits would work really well as a flatbread topping! A few handfuls of one of these mixes would be great in a chilled pesto pasta salad! They are also perfect for a quick coleslaw or to make a Waldorf Salad.
