5 Quick Lunch Ideas for Mom
I’m not one of those gals that can skip a meal. I generally start thinking about lunch right after breakfast. And while I love food, I don’t want to spend a ton of time preparing anything. These quick lunch ideas for mom are perfect for the busy mom who has a long to-do list but wants to eat something delicious.
Avocado toast is so trendy right now. They might even be the new donut… I just learned to love avocados over the last few years so it’s a relatively new ingredient for me to play around with. I don’t love (but hate is such a strong word…) mayonnaise, so swapping it out with avocado is the best idea ever! Tuna was literally the only thing I ever used mayo for (like, 1/2 tsp) so having a way to make tuna without it is crazy cool. Plus I hear avocados have good fats. Again with the avocado toast! I know, you’ll probably burn out of avocado toasts but I also LOVE a caprese salad. It’s really a versatile lunch option. The fresh basil, yummy tomatoes and mozzarella cheese are the perfect blend of flavors. And it’s super easy to mix in other flavors to create more lunch ideas. The avocado will add a wonderful creaminess to this open-faced sandwich. You can add a slice of turkey for more protein. Or you can close that bad boy up and make it in to a full-fledged sandwich. I’m addicted to farro. And while it takes a few minutes to cook, you then have it to use for meals for the rest of that week. Adding the bright, fresh mediterranean flavors makes this the perfect mom lunch idea for spring. I’d leave out the sun-dried tomatoes, because gross. And I’m just finding that I like Feta cheese now too. Although it smells like feet, it has a nice salty flavor that is really great with fresh veggies. This recipe is really for BLT Chicken Caesar Salad Wraps but I’m not big on sauces so I’d leave the dressing off. I eat a lot of chicken but you know that can get a little boring. The fresh tomato and lettuce keeps this juicy (especially without the sauce) and the bacon adds that special touch of love that only it can. It’s hearty but different enough from a sandwich that it will provide some variety in your lunch routine. I really don’t make wraps as much as I should. I find it so hard to stay full and satisfied during the day. My food choices are often not the best that they could be (looking at you, Doritos.) Hard boiled eggs are a great way to get in some protein and the addition of this salty sweet marinade is an interesting twist on an old, boring classic.
