This might be the best dessert idea ever! This nostalgic strawberry cake is so easy and is a total crowd pleaser! It only uses a few simple ingredients but is so flavorful and reminds me of summer! My mom used to make this for us on summer break and it makes my heart smile just thinking about it. I love that I now get to make it for my own kids! It’s really more like a dump cake. But it/s no bake which is why it’s perfect for warmer weather. This poor, sad, ugly little cake. This is not the dessert you will make if you are trying to impress guests who are superficial and in to outward appearances. This is the strawberry cake recipe you make for your friends when you want to give them a mouth hug.
Here is a super easy strawberry snack. Wait, easier than actually just eating a strawberry? Well, no. But it IS still easy. And super delicious. I’ve learned something about myself over the years. I see it as a skill. Not one that you would ever really need. And it doesn’t do your waistline any favors. I have the innate ability to take a food and figure out how to make it as unhealthy as possible. This can mean taking something unhealthy already and making it more delicious and amazing (thereby making it way more unhealthy, remember these lazy nachos?). But I’ve noticed I do it with perfectly healthy items too. Take for instance, the strawberry. A perfectly fine piece of food on its on. With its juicy sweetness and bright bold color, I should be fine, happy even, to eat it in its natural form. But this is how I often eat my strawberries. With…are you ready…SOUR CREAM and brown sugar. What the!?! Full disclosure, my close friend Lisa actually turned me on to this one when we worked in catering for a hotel together. And that was a good 10 years ago. And I’ve never forgotten it.
Would you try this? I’ll be honest, I only just really started on the whole sour cream train a few years ago. But there is something about the tanginess mixed with the brown sugar and strawberry that just makes your mouth so happy.
Try it. Then serve it to your closest friends. The ones who eat just as much junk food as you do and don’t judge you for it. The people who you plan all your meals out in advance with before heading out on a girl’s trip to maximize the dining possibilities. The ones who are fine to see you in your “fat” pants after you have eaten too many strawberries dipped in sugar. If you even question the reaction you may get from a friend it is best to not introduce them to fat strawberries (I didn’t really intend to name them that but it has a nice ring to it, fat strawberries). I very rarely use fresh ginger. But for some reason I always have some in my freezer. Ever since I made a syrup with it for homemade ginger ale for my son’s birthday party I have kept it on hand. The smell always gives me a quick pick me up. I’m very picky about the freshness of my fruit, but I hate to waste it. This is a great recipe for strawberries that are looking a little sad.
Then muddle your little heart out. I’m sure there are rules for not being too rough with your fruit but I just wanted to make sure that I was able to get the limes to release their oils and juice and make a dent in the ginger to release its flavor. The strawberries get pretty squashed.
Add ice to your glass and top with Arrowhead® Brand Sparkling Mountain Spring Water. Place a sprig of mint in the palm of your hand. Clap your hands together a time or two to get the mint to release its fragrance. Add the mint and a straw to your glass and enjoy.
This is super refreshing and delicious. The fresh ginger gives it a little kick and the fresh lime and strawberry just work so well with it. You will get pieces of fruit stuck in your straw. If you give it a little mix with the straw you can see from the shot above that the larger pieces can get stuck up on top of the ice and make it less likely to stop up your straw.
